Happy Birthday Daddy!

I had the pleasure of making birthday dinner for my sweet dad tonight!  I am an admitted daddy's girl!  My dad hangs the moon.  He is smart and sweet....eternally optimistic...quirky and a bit antagonistic.  He oozes charisma and logistics.  He is grounded in his faith and has always been a logical and moral compass for me pointing me towards the Truth and holding me accountable.  The older I get the more similarities I see in me and him.  I hope that one day I can be half the man he is...except uou know...in woman form!  I love you daddy so very much and I am so blessed to have such an amazing man of God for a dad. 

Here's a pic of the cake I made him...it is a pina colada cake...it is Deee-lish!  It was often our birthday cake through the years as this cake was his and my favorite cake...and since our birthdays are so close we got to be birthday buddies!  Oh yeah...those are my goobers in the background!

Steak, swans, & giraffes

So before I talk about today...here's a cute story about mk:
Last night when I served her the chicken lentil soup she looked at it and asked "what is that"..I was half paying attention and said "lentils"  because I assumed that was what she meant.  She said "no...this meat..what is it?"  Confused, I replied "chicken...why do you ask?"  Her response left me dying laughing...she said "well I just didnt know if it was a different meat like duck or swan or something..."  swan?  Really?   Seriously never know what will come out of that kids' mouth! 

So today while in Abilene we got together with my parents and went to Pirini Ranch Steakhouse to celebrate my dad and my birthdays.  It was fun and so soooo good!  I had prime rib and it was great...it had been so long since I had prime rib!  I highly reccomend going if you are looking for great steak.  Its not a big menu, but be prepared....it is a pricey one, but its totally worth it!

I will leave you with some pictures.  Most of them are of us at Pirinis...individuals around the table.  There is one picture of a toothbrush...it is Bria's giraffe toothbrush.   It has a suction cup on the bottom of it and you never know where it will end up aftrr brushing.  This was tonight.  Also there is one of mike and mk waiting for the bus playing star wars angry birds...its how we roll!

Rainy day GA's

Today was my first day back with my GA's since dec.  Since it was so cold and rainy I only had 4 of my 8 3rd and 4th graders.  No worries...it was still fun! 

Tonight for dinner I both tried and modified a new recipe for lentil soup.   It was a great day for it since the weather was gloomy.  It was so so sooooo good!  Mike loved it so much he said I should make it once a week regardless of the weather!  the grest th ing about t he recipe is that it mskes about 8 servings (large servings) and it is 220 calories per serving.  And it is super filling!   One and a third servings filled up my big football meat eater husband! Its actually pretty simple:

Ingredients:
2 tsp olive oil or bacon grease
1 1/2 c. Onion diced
1 1/2 c. Carrot chopped
1 c. Celery chopped
4 cloves garlic finely diced
1 lb. Boneless skinless chicken breasts
Kosher salt
Herbs de provence (or italian seasoning-whichever you prefer)
1 14oz can diced tomato with juices
1lb bag of dried lentils
8 c chicken broth

Directions:
In a dutch oven heat up oil or grease over medhi heat.  Add onion, garlic, carrot, and celery to the pot.  Salt to taste (about a tsp or so).  Cook about 5 min then push to the sides of the pan.  Slice chicken into small bites and add to the center of the pot to cook.  Salt chicken and cook stirring occasionally for about 5 min until onions start to brown and chicken is cooked through. Add tomatoes with juices, bag of lentils,  about a tsp. Of herb de provence and all the chicken broth.  Bring to a boil stirring occasionally.   Once its boiling reduce heat to low and cover.  Let vook for about 35 minutes.  Serve hot!

Dance dance dance and more birthday

Today MK went back to school...I dont know who was more excited...scratch that...I had to get up at 6:00am...she was the ONLY one excited!  Bria missed her sissie but enjiyed not having to share momma...she soent quite a while snuggled up on my lap this morning!   Mk was so excited to be back that she told me when I picked her up that she was upset that she would only get 3 more days of school this week before another break...you know...the weekend!  Only her! 

The girls were so excited to get back to ballet today!  They got new leg warmers for Christmas and today was their first time to wear them.   They looked so cute!

After ballet we went and had dinner with my parents. ..I gave my dad his birthday present from me and kim...a giant coffee cup that says "everything is bigger in texas" and some k-cups!  And at home I had one last birthday present waiting for me from the sweetest in-laws a girl could ever have: a new cuisinart hand mixer and a cuisinart immersion stick blender!  Super excited!  I am one blessed woman!

There's a mouse about the house

So we live in the country now and there are mice.   We have learned in the 7 months we have been here to just always keep traps set.  So we do...but our mice are special mice...they mock our dollar store traps and lick all the peanut butter off while never setting of the trap.   Apparently we are hosting an all night peanut butter buffet!   So today we went and bought better traps. .. here' s hoping we catch them!

In other news, today is the last day of break for MK.   Tomorrow she heads back to school and boy is she excited! On top of that, ballet starts back tomorrow too!   We are just jumping right back into the swing of things here!   Now just pray my alarm wakes me up in the morning...2.5wks of waking up at 8 or 9 may have spoiled me!
