Mom fail

Last night I stayed up until 2am baking cupcakes for Mk's school easter egg hunt...I woke up this morning and realized that they all stuck to the pan (I didn't have the cupcake  cups I thought I did so I sprayed and prayed).  Having only a couple hours til the egg hunt and no cupcakes or cupcake liners I showered and ran to sweetwater about 30 minutes away to just buy some cupcakes.  Get there, rush back and have just enough time to put cute little cadbury mini eggs on top to make them festive.  Get up to the school only to find out the egg hunt is tomorrow...doh!  Seriously need a do over today!  On top of all that, my hair feels weird today because my bangs will ONLY go to the 'wrong' side.   I figured I figure anyone out there that saw the ravioli post and was fooled into thinking I have it together should see the real me...scatterbrained..crazy...but fun and thankful for grace on days like today!

Just your average sick day

Today was a sick day for me.  So you know...I rested some...Mike was amazing and let me sleep in this morning which helped so so much!  I rewarded him by making homemade ravioli!  Oh yes, I also made 6 more loaves of sourdough bread.  You know...just your average sick day, making pasta and bread from scratch.  

Ravioli is Mike's favorite pasta dish.  He was not disappointed!  I used a recipe for the pasta, but really its a pretty standard pasta recipe.  And I used my new perfect pasta flour from King Arthur Flour!  


So it was just 3 cups of flour and 4 eggs.  If you don't buy the pasta flour blend, you can buy semolina flour and do 2 c. of semolina and 1 c of all purpose flour  OR you could do 3 cups of all purpose flour although the texture is not the same.  

You could do the old fashion style and mix it on the counter with the well in the flour.  I prefer to use my food processor because it is less messy.  So just toss your flour and eggs in the food processor and pulse it together until it is well mixed.  Slowly add 3-5 Tbs of cold water while pulsing until it starts to come together.     


It should look something like this picture below:



Turn the dough out onto the counter top and knead it for about 5 minutes....ain't no pansy kneading allowed!  You can do it, put your back into it....seriously  though...you need to really knead it and knead it well!


After you knead it, form it into a oval or rectangle that is about an inch thick.  Wrap it in saran wrap and put it in the fridge for about an hour to rest!


Next, I broke out my trusty pasta roller attachment for my kitchenaid stand mixer.  The process is a bit tedious, but since I LOVE cooking, it is theraputic for me!  
Cut off a small piece of the pasta dough.  The square above should make about 5 sections to be rolled out.  Put some flour on your surface and roll out the section to about a quarter inch thick rectangle. 
If you don't have a pasta roller, you can use a rolling pin and roll it out.  you want it to be thin enough to just start to see light through it.  About the thickness of construction paper.
If you do have a pasta roller, set it on your widest/thickest setting and slowly run it through the pasta roller.  There are a lot of youtube videos and such out there that will teach you all the techniques on pasta rolling, the most encouraging thing I can say is that the more you do it, the more you know how.  Helpful...I know...you're welcome!  Once it goes through once, fold it in thirds and pass it through again.  Repeat this process about 4 more times on the same thickness.  Change the setting to one setting thinner and pass it through.  Change again and pass through.  Continue until you get to about a 5 (the thickness setting).  



Lightly flour both sides of the pasta and lay out on a big pan or cutting board or counter top.



For the filling, I took two chicken breasts and baked them until cooked through with a seasoning of kosher salt and Tuscan Seasoning (it is a seasoning grinder we got at sams...we LOVE it and use it on almost everything).  Once cooked, I ground it up in a food processor until it made a chicken meal sort of.  


Next I used the food processor to chop some fresh spinach.

Next I mixed in some granulated onion, garlic salt, 2 cups ricotta cheese, 1/2 c parmesan cheese, 1 c italian blend cheese, and about 1/4 cup of heavy cream...Mix it up thoroughly!


Scoop out the filling evenly spaced on the sheets of pasta.  Use a brush to brush some water around the filling on the pasta, just to moisten slightly and form a seal.  Fold down the sheet of pasta and press the pasta together around the filling.  You can either use a pizza cutter and cut it out in a square, or if you have a ravioli press you could use that.  I used a 2 inch biscuit cutter and cut them out. 





Lightly flour them so they don't stick together and put them in a dish to wait for you to cook them. I cooked them in two batches.  Boil a big pot of water and add about 1/4 c of kosher salt to the water.  Drop about 10-15 of the ravioli in the pot at a time...let them cook for about 2-3 minutes...they don't take long.  



While the water was coming to a boil, I put two sticks of butter and two cloves of garlic, finely diced, in a saute pan over low heat.  Let it melt and start to cook.  As it heats up the milk fat will separate from the butter and rise to the top as a white foam on top.  Use a spoon to remove that layer and continue to let the butter heat up and get darker in color.  


Use a fine mesh strainer and pour the butter through the strainer over the ravioli.  This will remove the big chunks of garlic and leave a nice clarified butter sauce!  


This platter was gone!  It was a hit with the family!  Oh, and I am not sure why, but dinner has turned into a fancy occasion...MK routinely changes into "nice" clothes for family dinner...I don't get it, but isn't she a cutie!!!

A side note about the sauce, you could do a different sauce, but there is a lot going on in the filling flavor wise, so i would keep whatever sauce you use simple.  

Pasta:
Ingredients:
3 cups pasta blend flour  (or the substitutions listed above)
4 large eggs
3-5 Tbs. cold water

Directions:
Pulse flour and eggs in food processor until mixed well.  Pour in water little by little while mixing until dough starts to come together.  Knead vigorously by hand for about 5 minutes.  Wrap with plastic and chill in the refrigerator for about an hour or so.   Roll out by hand or machine.  Use as needed for pasta and ravioli or whatever you need it for.

Filling for Ravioli:
Ingredients:
2 chicken breasts
1 cup fresh spinach
16 oz container ricotta
1 cup italian blend cheese
1/2 cup parmesan cheese
garlic salt to taste
granulated onion to taste
salt to taste
1/4 cup heavy cream

Directions:
Bake chicken seasoned with kosher salt and tuscan seasoning until cooked through.  Using a food processor grind up the chicken and put in a bowl.  Grind up the spinach and add to the chicken.  Add the rest of the ingredients and mix very well.  Use as filling in the ravioli.

Dog tired but happy!

We just got in around midnight from ft. Worth.  It was CRAZY but so nice.  I had 36 clients in a 48 hour window!  IN...SANE!  But I wouldn't trade it...I got to catch up with old friends and my girls dis too!   Brianna has had an especially hars time with the move as she has lost having her Chey every day and her school!  It was so good for her to get to see her Cheyenne...they might as well be sisters! This evening after dinner we looked over at them and they had two swirly straws in a cup of milk and were sharing, slurping, and giggling!  Too cute!  I am so thankful for friends who  welcone us back from time to time and allow us to invade their homes for a couple days!

Sour

I found out that a woman in our church LOVES sourdough bread.  You know me...CHALLENGE ACCEPTED!!!  To be honest I have been wanting to try my hand out at sourdough for a while but I was too afraid.  I looked up recipes for starters but having zero experience with sourdough...that idea intimidated me.                     I found a starter by King Arthur Flour.  It has been going since the 1700s!  That is impressive.  While I was ordering the starter I decided to also order some of their perfect pasta flour blend (a blend of durham, semolina, and all purpose flours) and a pack of disposable bread pans (so I can make bread for Mike to take visiting and it is easier to transport).  I also now get the King Arthur Flour catalog and emails as a result of my order...which is very dangerous for our budget!  


So I got my sourdough starter and followed the instructions for "feeding it".  I followed them to a T and then made my first loaf.  It was very good.  However it didn't really have much of a sourdough flavor.  It could almost pass for italian bread last night when it was warm.  Today it had a slightly stronger sourdough flavor, but hey, its homemade bread...it was still delicious.

So last night I did some research online.  I found some great information and decided that I needed to do two things.  
1) feed my starter and let it rest for 24 hours to ferment thus resulting in a more "sour" starter.  FYI: when feeding your starter, use unbleached, unbromated all purpose flour.  I use HEB brand because I like it, but just make sure it is NOT bleached or bromated...there are not enough microorganisms to ferment in it.  Also, don't use fresh milled flour as it has more oils that cause it to go rancid before it can ferment.  I found a lot of helpful information from this BLOG   she also has a recipe for your own sourdough starter from scratch instead of buying it.  I may make it someday if I ever need to and am brave enough.
and
2) find a crock to hold the starter that has a better lid.  The crock needs to be completely non reactive, so stoneware or glass.  Right now my starter is in a glass pyrex bowl which is fine and works, but until I could get something better to hold it to help the fermenting process, I needed to find a different cover for it.  You can't cover a starter tight because the gasses that build up have to be able to escape or else it will explode.  But you do need it to be mostly covered.  I was using the plastic lid on top but not latched on...this left too much uncovered.  Now I have one of our big plates over the top of the bowl and it is working beautifully.  There are bubbles in the starter like there should be and it has a nice "sour" smell.  I hope to get a crock this week, but until then....whatever works right!
Today I made 5 small loaves for Mike to take visiting.  They smelled so good and I could smell the typical sourdough bread smell!  


Here is the recipe I used.  I found the recipe through King Arthur Flour but have changed it just a bit.  I upped the salt from 2 tsp to 1 Tblsp, I mix everything but the flour and then let it proof for 5-10 minutes to activate the yeast, and if I am kneading it in my stand mixer I add a full 5 c of flour, if I am kneading it by hand like today, I only added about 4.5 c of flour.  So definitely go by feel with the flour.  As with all recipes for bread sometimes it will take up to a c. less, sometimes up to a c. more...The more I make bread, the more I like kneading it by hand.  It is more work and I don't do it all the time, but you get a much better feel for the dough and what it needs!!

Sourdough Bread
Ingredients:
1 c. sourdough starter
1 1/2 c. warm water
1 T. sugar
1 T. Kosher Salt
2 1/4 tsp. yeast
5 c. unbleached all purpose flour

Mix all ingredients except flour in bowl and let sit covered for about 10 minutes to proof.  Mix in about 3 1/2 c. flour.  Turn out onto surface and slowly knead in another 1-2 c of flour as needed until the dough is smooth and elastic.  Put into a greased bowl and cover.  Let rise in warm place for 90 minutes (I use the oven off but with the light on...perfect rising temp).  Divide and form into loaves (2 large, 3 medium, 4-5 small-can either place directly on a baki)ng sheet or pizza stone or can use loaf pans of varying sizes.  Cover and let rise for 60 minutes.  Slash the top ( I do one slash down the middle on top, but can do several diagonal or an x...whatever you prefer).  Place in a preheated 425* oven.  30 minutes for large loaves, 18 for small.  You want the bread to be light brown on top and hollow sounding if you tap it.  Enjoy!

Officially Texan (well closer anyways)

This weekend Mike became a little more Texan.  We've only lived here for almost 6 years...its about time.  Ever since we moved out to Rotan we have been talking about getting a gun.  We live out in the country now and if we were to see a snake or a coyote or wild dog we wanted a way to protect us and the girls from them.  So finally, Mike got his gun.  Its a bolt action .22 rifle...nothing fancy.  Just something to take care of varmits!  Here are some pics of him teaching the girls about gun safety and the different parts of a gun.  We want to make sure that they know not to bother it and that they know how to be around it safely.  Disclaimer: the gun is not loaded and the safety is on...the magazine with the ammo isn't anywhere near the gun let alone installed in these pictures.  In case you were worried.  













And here's Mike shooting his gun for the first time.  They recently pulled up a bunch of trees from our yard so that served as the perfect target.  Right now there is a run on ammunition so all we have to shoot is rat shot, which is fine because that's mostly what we plan to use anyways for the varmits around here. 

Now if we could just get Mike into a pair of cowboy boots, he might actually fit in around here!  Love you babe!

Rattlesnake Roundup

Last Friday Mk had a half day of school and it just so happened to be the first day of the Annual Sweetwater Rattlesnake Roundup.  We were especially excited to go this year because one of our friends' daughters won the pageant the night before and was crowned Miss Snake Charmer 2013.  She has an AMAZING voice and is going somewhere, I tell ya!  So we were excited to see her and willing to brave the snakes.  We actually had a lot of fun.  




Friday was the BEST day to go because there were not many people there...we didn't have to fight the crowds to see everything!  Here is a view of the floor of the colloseum...there were vendors selling snakeskin wallets and snakeskin belts and snakeskins and everything. Also there were several pits for the snakes.  
This is the Show Pit.  This gentleman gave a great informative session on rattlesnakes, their nature and safety!  Here he is trying to get the snake to strike at the balloon to demonstrate to us how quickly they strike!


Here is Miss Kyndra Lee herself....she got to show off the snake to all the spectators!  She's so lucky (*sarcasm*)!!!  But she was so good...I would have been a mess if I had to do what she did with all those snakes...she just handled it like a pro!  Mad props, Miss Snake Charmer, Mad props!

While we were at the show pit we saw this guy.  His name is Riley and he is one of  the snake catchers on the tv show "Rattlesnake Republic"

So the first place the snakes go to is the milking pit where they get milked for their venom.


Then they go and get "stats"  Here they measure them, determine male or female, and weigh them.  They then report these stats back to the department of wildlife.  This gives the state a great cross section of the states rattlesnake population, numbers, diversity, etc and they can regulate it based on this info!

While at the measuring pit they let people touch the snakes (while immobilizing the head so its safe).  Here is a picture of the girls touching the snake. 



And not to be outdone by my daughters...here is me with the snake draped over one of my shoulders.  If you know me ...you are probably shocked by this picture...I am terrified of snakes.  But somehow I conjured up the courage to do this!  (ignore the fear in my eyes :p)

Thats a lot of snakes...and thats not even all of them...they were bringing them in all weekend!



After the measuring pit the snakes go over to the beheading and skinning pit.  You can pay $20 and let your kid (or yourself) skin a snake and keep the skin.  After you are done you take your bloody hands and make hand prints on the wall and sign them!!!  Only in Texas folks!!!  Mk wanted to do it until she saw this little girl do it and she almost lost her corndog!  


After they are skinned the meat gets fried up and sold, or sold in bulk to people who take it home and use it in their regular cooking!  Eww....we were not brave enough to eat it!

And just for fun...while we were talking to Kyndra after she sang, the Abilene Reporter News snapped this pic of the girls admiring Kyndra's rhinestone encrusted boots!  I loved them to!  Check it out!

Overall I was not expecting to enjoy the Roundup as much as I did.  I appreciated that the Roundup takes pride in educating people about safety and rattlesnakes in general.  It helped a lot to keep fears rational!  I also love that they help control the snake population!

The Key

So this morning I was cooking up some sandwich rolls and lemon bars.  Bria was playing with some stuffed animals and all of a sudden she comes in and asks me "Momma, do you have a key to your bedroom?"
HUH?  My response was "why?" ...although deep down I already knew.
"uhhhh....weeeelll...momma, Jib (MK's teddy bear) was sick (pretend throwing up) and he wouldn't stay away from Sister Christmas Buddy (one of her stuffed giraffes) so she is sick now and so I put her to bed in your bed and locked her in so Jib couldn't get to her"
Uh huh...You should know that the lock on our door is not some simple bathroom door lock with a pop button or push in handle...its pretty much a front door lock...and of course we don't have a key.  We live in a parsonage...albeit a very nice parsonage...but a parsonage where we did not install the lock and we do not have the key.  So even though I am rather adept at picking locks (I had two sisters and I learned how to get into the bathroom...sometimes they would lock the door while they showered and I needed to pee!)...I couldn't pick this lock...too complicated for me.
I called Mike...luckily he was just across the parking lot at the church...and I hope (so did he) that one of the random keys we were given when we moved in that might work on any number of doors between the parsonage and the church would work on our bedroom door.  They didn't.
Then my wonderful husband remembered that the hvac closet is right next to our bedroom and has both a door to the hallway and a door to our bedroom.  Why...I don't know...but today I was grateful for it!!  

There is a space about 6 inches wide (as you can see in the above picture...that space where you see the shutters is the space)...just wide enough to pass through a 4 year old and made her unlock the door.  So even though she was crying because she didn't want to, Mike passed her through and told her that she needed to unlock it since she locked it.  She did it and then He praised her for being such a big girl and for being our hero.  It helped her calm down...that and momma snuggles...those always help!  Did I mention I married a great man!  He is such a good dad and such a good balance to me...I was mentally freaking out trying to figure out how to get in there and how to get my clothes (yes I was still in my pjs!) and a whole host of how to's.  He was so calm and awesome!

In other "Keys"...we just bought a membership to the Abilene Public Library....yes we had to buy it even though it is public because we don't live in Taylor County, but it was only $10 for the year and we are in Abilene right across the street from the main branch for Ballet twice a week...so that was a simple decision.  Today was the first time we have checked out books from there.  I was pleasantly surprised to see that on all books considered Christian in genre or having a christian author there is a sticker on the spine that has notifies you!  I LOVE this... I try to make sure that the books that MK reads are age appropriate and also content appropriate for a christian young lady, but sometimes its hard to know without reading the book, there are not a lot of places out there that do christian reviews of kids books (plugged-in, on the off chance that your reading this...please add this!).  So, having this makes it easier for me to trust that the content shouldn't be bad and should be appropriate for my daughter.  Also, it is helpful for me....I don't want to end up with trashy books either, so...yeah...I am loving our $10 investment!

Gluten Free Fun

So, we are not gluten free.  We actually enjoy gluten.  However, at one time I did paleo which I actually really enjoyed.  I have played around with doing it again, but one of the things I didn't do before was experiment with grain free or gluten free since you don't do grains on paleo.  Well, fast forward two years and my dad has done Atkins for a while.  We were having them over for dinner with my grandparents and I was making big beautiful homemade hamburger buns...I decided to try an almond meal flatbread.  He really enjoyed it and took home the leftovers to use as a toast substitute.  So then we had pizza night with my parents and my dad said he would just use a low carb tortilla and put toppings on that...I couldn't have that...So, I found a recipe for almond meal yeast crust and even ground up my own almond meal.  I personally like it almost better than the regular crust...I like the crunch of it and the nutty flavor.  It was so good!  So without furthar talk, here are my recipes for almond meal flatbread and almond meal pizza crust...I say my recipe because I altered both from the original recipe I looked up.


Almond Meal Flatbread:
Ingredients:
1 Cup Almond Meal
1/8 Cup Flax meal
1/8 Cup water
dash of kosher salt
1 Tbs olive oil
1 egg

Directions:
Mix all ingredients together well.  Divide into four.  Form each of the four into a flat disc about 1/2 inch thick and place in a pan heated to medium heat with a little butter or olive oil or coconut oil in the pan.  Let cook for about 5 minutes or so.  Flip and press down after flipping to flatten down to 1/4 inch thick. Cook 5 min on that side. Remove from heat.  Enjoy however...toast in a toaster, use for sandwiches, spread nutella on it...whatever :)


Almond Meal Yeast Pizza Dough:
Ingredients:
1/4 tsp. sugar (or honey if you prefer)
2/3 cup warm water
2 1/2 tsp. yeast (or one packet rapid rise yeast)
1 1/2 cup almond meal
1/8 cup flax meal\
2 Tbs. olive oil
1/2 tsp kosher salt

Directions:
Mix warm water, sugar, and yeast  in a bowl.  Let it sit about 10 minutes to proof (get foamy/frothy).  Mix in the rest of the ingredients.  Let it rest for about 5 minutes.  Spread the dough on a seasoned pizza stone.  It will have more of a paste like consistency so you will probably want to use a spatula or spoon to spread the dough on the pizza stone.  it will make one 12 inch crust.  Bake in a 400 degree oven for about 20 minutes or until the crust starts to get golden brown.  Remove, top with toppings and bake until cheese is bubbly and delicious or toppings are cooked.  Enjoy!

Adoption

A couple months ago I was linked to another blog through a friend.  She is passionate about adoption and I was excited to read her post.  As I was there I started reading her adoption journey.  It was AMAZING to say the least.   One post in particular that really got to me was this last post HERE.  I encourage you to read it because it is beautiful, but for the sake of the rest of this post, I will reprise it briefly: They entered into adoption on the promise of a friend that said they wanted to pay for it, in the end, the friend couldn't follow through on her promise and God provided in miraculous ways for them to afford to adopt.  The whole point of her post is to never let money be the one thing that stands between you and adoption.  

I feel like God personally invited us to attend this conference today.  We were so overwhelmed with where to start, who to talk to, where to turn, and about two weeks ago, out of the blue we received an invitation for anyone at our church interested in adoption (HELLO!) to attend a free (HELLO!) conference at Pioneer Drive Baptist Church with free Chick-fil-a for lunch (HELLO!).  Completely God!  We immediately called and signed up.  I was expecting that we would learn more about types of adoption-which we did, and legal stuff and home study info-which we did, and how to choose an adoption agency.  What God did was so much more.

God met us there at that conference and unified our hearts to His plan for us involving adoption. He revealed to us clearly what type of adoption to pursue (Infant adoption through an agency) and what agency to go through!  We are currently filling out the pre-application to go through a Christian adoption agency based out of Abilene.  We heard from so many people who work there both in our sessions, and just others attending the conference.  At the end of the day we had a great conversation with the Vice President of the agency and both walked away from it with a Divine Peace that we had just found our agency!  It is a small agency and we are so excited to begin this process.  We are hoping to get our pre-application in within the next week in hopes of going to an Orientation course in April.  

So what does this have to do with the blog post I mentioned earlier?  Well, our adoption is going to end up costing us around $25,000.  As you may have guessed, we don't have $25,000 lying around...surprise surprise.  However, we are not going to let it stand in the way.  We had expectations for this conference and God showed up and showed us how small our expectations were.  He exceeded them.  To me $25,000 seems like a HUGE number...and it is...but I believe that God is bigger and will provide for all of our needs with this adoption just like He has provided for all of our needs with everything else He has called us to.   Thank you so much for your prayers today...they were felt!  We would love for you to pray with us through this journey as well!

Week in pictures!

Here's a little recap of our week!!!

We started the week with a little snow!  It wasn't much, but it was nice to see...reminds me of New England, except almost better because we didn't have to shovel it!


I have been trying to challenge myself to bake/make stuff to accommodate my dad's low carb meal plan.  I made almond meal pizza dough which was oh so good! and also almond meal flatbread that my dad used as a hamburger bun when they came over on Monday night for dinner with my grandparents.  He has also been enjoying the flatbreads as a toast substitue...only 2 carbs a piece and the crust below is only 1.5 carbs per slice based on 8 slices.  





I can't bring myself to pay $12 a pound for almond meal and ran out of my supply from Sprouts (I miss Sprouts) so I bought a 1 lb. bag of blanched almonds and broke out the trusty food processor.  It worked pretty good!  That's what I used in the pizza dough. 


Here is my grandparents at our house before they left.  They got the chance to come out to us and see Rotan and our house and enjoy venison bacon burgers with us.  I am so grateful that my girls are getting the chance to enjoy getting to know my grandfather and grandmother!  


Speaking of my grandparents coming over, I made this treat...Homemade angel food cake layered with Lemon Curd Mousse...it was quite delicious!


MK and I decided to do 4 crazy buns for ballet on Thursday...she is growing up so fast!!!


...and while she was at ballet, I had a coffee date with this little miss!
