Rainy day GA's

Today was my first day back with my GA's since dec.  Since it was so cold and rainy I only had 4 of my 8 3rd and 4th graders.  No worries...it was still fun! 

Tonight for dinner I both tried and modified a new recipe for lentil soup.   It was a great day for it since the weather was gloomy.  It was so so sooooo good!  Mike loved it so much he said I should make it once a week regardless of the weather!  the grest th ing about t he recipe is that it mskes about 8 servings (large servings) and it is 220 calories per serving.  And it is super filling!   One and a third servings filled up my big football meat eater husband! Its actually pretty simple:

Ingredients:
2 tsp olive oil or bacon grease
1 1/2 c. Onion diced
1 1/2 c. Carrot chopped
1 c. Celery chopped
4 cloves garlic finely diced
1 lb. Boneless skinless chicken breasts
Kosher salt
Herbs de provence (or italian seasoning-whichever you prefer)
1 14oz can diced tomato with juices
1lb bag of dried lentils
8 c chicken broth

Directions:
In a dutch oven heat up oil or grease over medhi heat.  Add onion, garlic, carrot, and celery to the pot.  Salt to taste (about a tsp or so).  Cook about 5 min then push to the sides of the pan.  Slice chicken into small bites and add to the center of the pot to cook.  Salt chicken and cook stirring occasionally for about 5 min until onions start to brown and chicken is cooked through. Add tomatoes with juices, bag of lentils,  about a tsp. Of herb de provence and all the chicken broth.  Bring to a boil stirring occasionally.   Once its boiling reduce heat to low and cover.  Let vook for about 35 minutes.  Serve hot!

Here are some pics of my dinner and my GA girls!  They were building pyramids out of cups with words on them.  but they had to put the cups in order matching the verse for the month!
